Our Story

The Rodrigue family has lived and thrived in South Louisiana since the late 1800s. Originally, we settled in Pointe Aux Chene as trappers that lived off the land. As time went on our family relocated farther up the bayou to Schriever, Louisiana, where we became farmers. This area allowed our family and our farm to flourish. It’s the Rodrigue heritage to live off of the South Louisiana land and we would love to keep that alive for our family and our community.

With that vision in mind, we purchased a well-known slaughterhouse in Lockport, Louisiana, after being in the (Plaisance or previous owner’s) family for over 50 years. Bayou Butchers LLC will be offering custom and inspected beef, pork, goat and much more. As a family looking to keep what we love alive, we also would like to do the same for others. We love this great state, and we love our community.

Bayou Butchers LLC is a family owned and operated slaughterhouse specializing in custom processing of carious livestock animals. Our services include slaughtering, processing, and vacuum packaging. Each animal is processed in a timely manner, with a turnaround time of approximately 16 days unless otherwise requested. We have competitive pricing, charging per lb of wet hang weight, and offer pick up within a 50 mi radius. We take pride in great cuts and great customer service, give us a call today! Services

Our meat processing services include different types of meat, including but not limited to:

Beef Meat

We process beef meat for our valued customers. The animal must be provided 14 days before you plan to have it for dinner. Once we receive the cow, it is stunned mechanically, according to the Humane Slaughter Act. The stunned animal is promptly slaughtered in a safe and controlled environment to limit diseases.

The legs are removed before the cow is hung and suspended on the hooks. Its veins are also cut to stimulate bleeding, known as exsanguination. Then, we wait 14 days for the blood to drain and reduce the chances of diseases.

Once the blood has adequately drained, the carcass is cut according to the instructions provided to us by our customers on the cutting sheets. The meat is then cut, cleaned, and frozen. After 48 hours, you can arrive and collect the frozen meat from our shop, exactly as you requested. Enjoy!

Pork Meat

If you want the best and cleanest cuts for pork, we can provide them to you. You can submit your hog to us at least 3 days before you plan to have it. Once we have the animal with us, we stun it through electrical means. The pig is then slaughtered.

After the slaughter, we thoroughly clean the carcass by placing it in a tank of scalding water. This helps remove any dirt, hair, or scurf. The carcasses are then hung, and any additional hair is shaved off. Finally, we drain the blood from the carcass for about three days.

Once the blood has drained, we cut the belly to remove the viscera. Next, we clean the insides again and remove the organs not intended for eating, such as the head. Then, we cut the carcass down the backbone and place them in the cooler for 24 hours. The meat is then cut as requested on the cutting sheet.

Lamb & Goat Meat

We specialize in the cutting and slaughter of lambs and goats as well. You can deliver your animals to us about a week in advance so we can process them as you desire. When we receive the animal, we stun it mechanically and promptly slaughter it to ensure that the meat stays fresh.

The carcasses are then cleaned, and their veins are cut to allow for all the blood to drain. This helps reduce the chances of disease and infection. We also chop off the limbs of the animals before hanging them. The process of draining blood generally takes about a week.

After the meat is cleaned and the blood is drained away, we chop the meat into pieces as requested by you. Then, we clean the meat and store it in the freezer for 24 hours to make it safe for consumption. After that, you can enjoy your lamb steak!

Wild Game Meat

We also process wild game such as deer. You can deliver your hunt to us about a week in advance so that we can run it through our standard meat processing procedures. First, we skin the carcass and cut the veins to drain the remaining blood to prevent disease.

After that, we clean the animal’s insides and chop the meat into your desired pieces. The chopped meat is then stored in the freezer for about a day to be prepared for eating. Finally, you can collect this meat and enjoy the spoils of your hunt.
